Woodland walks to gather your thoughts In HotSquash’s easy-care spring range!

HotSquash’s graphic designer Ana would like to suggest a solution: a walk around the woods. Even when living in London, one can experience the healing properties of nature. Ana's Wild Garlic Pesto

Recipe

Ingredients:

  • 150g wild garlic leaves (foraged or purchased from an organic retailer)
  • 50g parmesan or grana padano cheese
  • ½ lemon juice + zest
  • 75g almonds (toasted in a dry pan for 5 minutes)
  • 150ml extra virgin olive oil
  • Salt to taste

Method:

  • STEP 1

Wash the wild garlic thoroughly and roughly chop.

  • STEP 2

Blitz the wild garlic, cheese, garlic, almonds and lemon zest in a food processor until ingredients have combined and formed a paste. Next, slowly add all the oil whilst still blitzing on a low setting. Taste, season and add a few squeezes of lemon juice for extra flavour.
